
Sushi Rice
Quick and easy way to make sushi rice without rice cooker. 
Equipment
- 1 Pan with lid
 
Ingredients
- 2 cups Short grain rice
 - 2 cups Water
 - 1/4 cup Rice Vinegar
 - 2 tbsp Sugar
 - 1 tsp Salt
 
Instructions
- Wash the rice 3 -4 times until fairly clean, then strain with strainer and leave for few minutes until it drains.
 - Add water and bring to boil, boil for about 2 minutes then turn heat to low and boil (simmer) for 10 minutes.
 - Turn off the heat and keep the rice covered for another 10 minutes, you may throw a rug on top of the pan to keep the heat in.
 - Prepare the vinegar mixture. Pour rice vinegar into a sauce pan, add sugar and salt, heat a little to help dissolve ingredients.
 - Transfer the rice to a flat pan and spread evenly. Sprinkle vinegar mixture over the rice and then mix evenly with wooden spatula.
 - Keep mixing and at the same time use fan to cool it down. When close to room temperature cover it with damp cloth to prevent it from drying.
