Fruit Cake

Can be done with any fresh fruit; blueberry, plums, peaches, etc.

Ingredients Cake:
14 Tbsp of Butter
Pinch of Salt
3/4 cup of Sugar
4 Eggs
1.5 cup All Purpose Flour
1 tsp Baking Powder
3 Tbsp Potato Stach or 1/2 packet of Vanilla Pudding
2.5 Cup of any fruit (cut in halves)

Ingredients Crumble (Optional):
1 cup All Purpose Flower
7 tsp of Butter
1/4 cup of Confectioners Sugar
– connect all ingredients, put into fridge for few minutes.

Directions:
1. Put together and set aside: All Purpose Flour, Baking Powder and Potato Starch
2. In food processor whip butter until light and fluffy. Add sugar and salt and continue to whip.
3. Add eggs, slowly one by one. Continue to whip after each egg.
4. Add flour, starch and baking powder mix. And mix tother with butter using and wooden spoon or a spatula.
5. Transfer to a 7×12 pan lined with parchment paper.
6. Put carefully fruit over the bater.
7. Optionally put Crumble over the fruit – pinch using fingers.
8. Bake in 340 deg. for about 45 min (test with toothpick)
