Start with grounding almonds in food processor until almost fine but you still want some small chunks.
8 oz. Almonds – Ground
Preheat oven to 350 deg F.
In a bowl combine: Almonds, 3 oz White Sugar and Almond Extract
In a second bowl whip Egg Whites until stiff, then gradually whip in 3 oz White Sugar into egg whites
Very slowly combine egg whites with dry ingredients, gently folding it. And not over doing it.
Get a baking pan and line it with parchment paper.
Using a spoon or cookie dough scoop, put equal drops of the batter (they will get flat in the oven)
Bake for about 13-15 min until bit brown on the bottom and developed cracks on top.
Cool completely on the wire rack
Store in seal tight container.
